"Limone pane" 1Kg! Typical of the Campania (South Italy)
Home made “Primo sale” cheese with green tomatoes, black olives and pepper.
500g of flour 0, 350 g water, 1 teaspoon of dried yeast, 1 tablespoon of olive oil, 1 teaspoon of barley malt (or sugar), 1 teaspoon lemon juice, 1 teaspoon of salt.
Dissolve the malt (or sugar) in the water and lemon juice and add it to the flour sifted with the dried yeast. Knead vigorously until the dough comes away from the sides of the bowl. Add the oil and salt and knead again. Cover with plastic wrap and let rise until doubled. Knead again briefly and let rise half an hour. Preheat oven and baking tray to the maximum. Divide the dough into two pieces and gently form two thin circles on a floured surface, bringing gas from the rising to the edge. Dress and transfer the pizza on the hot, very hot, baking tray. Place near the grill. Cook for a few minutes.
